         PUDDING AND SOUSE IS A LOCAL DELICACY AND SATURDAY IS THE DAY THAT COUNTLESS LOCALS HUNT OUT THEIR FAVOURITE PLACE TO RELAX, MEET UP WITH FRIENDS, DRINK A RUM OR TWO, SHARE SOME LAUGHS AND DIG INTO SOME TASTY LOCAL CUISINE. IT IS WRITTEN THAT PUDDING AND SOUSE DATES BACK HUNDREDS OF YEARS AND IN TODAY'S DAY AND AGE IT HAS BEEN PERFECTED BY SOME, BUT NOT BY ALL. WE ARE FORTUNATE ENOUGH TO HAVE JUST THE PERSON FOR THE JOB. HIS NAME IS EZRI, AND HE IS ONE OF OUR SOUS CHEFS BUT LITTLE DID WE KNOW THAT HE ALSO IS A MASTER OF PREPARING THIS FINE TREAT. CASTAWAYS NOW GETS PEOPLE FROM ALL WALKS OF LIFE COMING FROM ALL OVER THE ISLAND, TOURIST AND LOCALS ALIKE TO ENJOY THE PUDDING & SOUSE AT CASTAWAYS ON A SATURDAY.

 

          PUDDING AND SOUSE STARTS WITH THE PORK, THAT HAS BEEN SEASONED AND BOILED UNTIL TENDER THEN IT IS TOPPED WITH A CUCUMBER PICKLE AND A MIXTURE OF FRESH HERBS AND SPICES & TOPPED WITH OUR THE LOCALLY FAMOUS SCOTCH BONNET HOT PEPPER. YOU HAVE THE CHOICE OF HOW HOT OR DARING YOU WANT IT- MILD, MEDIUM, HOT OR WITH EXTRA PEPPER. YOU CAN HAVE THE CHOICE OF LEAN MEAT, OR YOU CAN DIG INTO THE MANY OTHER PARTS OF THE PIG WHICH THIS DISH BECAME FAMOUS FOR. BACK IN THE DAY NOTHING WAS WASTED & WE KEEP THE TRADITION ALIVE FOR THOSE WHO WANT IT. THE MOST POPULAR ORDER IS, "STEAM & LEAN" ('LEAN' MEANS JUST REGULAR PORK MEAT WITHOUT ANY FAT) . THE PORK COMES WITH THE 'PUDDING', OR BAKED SWEET POTATO WHICH HAS A SWEET & SPICY TASTE AS IT IS COOKED WITH HERBS & SPICES. THIS IS ACCOMPANIED WITH BREADFRUIT, ANOTHER LOCAL STAPLE. OTHER DISHES SUCH AS, BOL JOL (SEASONED SALT FISH), PICKLED OCTOPUS, PICKLED FISH, PICKLED SHRIMP, OUR DELICIOUS FRIED PORK WITH A SPICY GARLIC SAUCE FEATURE ALONG WITH OUR REGULAR LUNCH MENU
